Crockpot Turkey Chili with White Beans and Pumpkin

Winter is tough — what makes it easier? Chili!

Use turkey instead of beef in this lower-calorie hearty alternative to the real thing.

There is a secret ingredient in there – shh don’t tell. It’s pumpkin. It thickens it up and just adds a full flavor. I make this once a or twice a month to have healthy meals throughout the week. Feel free to add additional veggies if you’d like. Also, feel feee to make it Spicy!!

Ingredients:
2 lb 99% lean ground turkey
1/2 tsp olive oil
1 small onion, chopped
3 garlic cloves, minced
1 tsp chili powder
2 bay leaves
2 tsp cumin
1 tsp oregano
2 (15 oz cans) white northern or navy beans rinsed and drained
15 oz can pumpkin puree
15 oz tomatoes
4.5 oz canned chopped green chile
2 cups low sodium, fat free chicken broth
optional:
chopped cilantro and chives
salt and pepper to taste
greek yogurt
